Vegan Rose Gelees (gluten free)

These can be used as a medicinal and balancing sweet. They help digestion and balance Vata and Pitta dosha.

Fresh Ingredients

  • Lemon Juice

Dried Ingredients

  • 30 gr. Dried Rose Petals (use organic roses if you collect your own, watch video HERE)
  • Sweetener of your choice such as Agave Nectar.
  • Psyllium Husk
  • 1 ltr. Water

Method

  1. Simmer dried rose petals in water for 15 min until the water has absorbed the colour of the rose petals
  2. Add the sugar or sweetener (don’t skip this step as the sugar acts as a preservative and reduces Vata and Pitta) and lemon
  3. Stir in the pysillium and let it melt then fill into ice cube trays and leave to cool
  4. Remove from the ice cube tray once the gelee has set and toss the cubes in corn starch which will help avoid them sticking to each other

Your Body Type

Roses balance all body types but the sugar aggravates the kapha body type. As a healthy home made sweet simply enjoy in moderation, limit to one or two a day.

You can leave the sugar out, however you will loose the preserving nature of the sugar and need to keep the cubes in the fridge and consume swiftly.
